Garlic Lovers’ Shrimp
Fusion dish inspired by Meena Sugavanam
Ingredients (per person)
8 Shrimp (25 count) peeled, deveined and butterflied
Pinch Asafetida
1 tsp Black Mustard seeds
Turmeric
Paprika
Salt
Pepper
1/2 tsp Thyme
1/2 tsp Marjoram
2 Tbsp minced garlic
3 Tbsp EV Olive oil
1 tsp Butter (or more)
Preparation
Lay the shrimp out on a plate and sprinkle with the salt, pepper, turmeric, paprika, thyme and marjoram. Place the skillet on medium high heat. Heat the oil till shimmering.
Add the asafetida and mustard seeds. When the mustard seeds begin to pop add the shrimp, spiced side down in a circle around the pan. Turn the shrimp and add the butter and garlic in the center of the pan. Turn off the heat and give iti all a good shake to mix and plate. Make sure to plate the oil and serve with a bright fresh green salad and some crusty bread to sop up the buttery olive oil, garlic and spices.
